DATE, ALMOND, CHEESE & HAM TAPAS
Al Herman - Winedog

This Spanish Tapa is a great appetizer or Hors d'oeuvres and is easy to make.

24 pitted dates
24 roasted and salted whole almonds (smoked or not)
1 oz. Garroxta (Spanish Pyrennes goat's milk cheese) or other medium hard white cheese
1 oz. Serrano or Procuito ham - shaved very thin

Slice cheese into ½" by 1/3" pieces.
Stuff dates with one piece of cheese and one almond.
Slice ham into 2” by 1½" sheets.
Wrap stuffed date with one sheet of ham and secure with a toothpick.

Serve with a light dry red wine like Cherry Creek Cellars Pinot Noir or, for a sweeter taste, Cherry Creek Cellars Rose's Rose.
